When it gets dark faster outside, and you come home drenched in rain after a busy day, you feel like a quick, comfy meal that you don't have to do any shopping for.

This wholesome, easy noodle soup (ramen) is perfect for that! You can make it according to Froodyz's recipe, but you can also make your own hatseflats with leftovers from the fridge. You can vary endlessly, as long as you have the basics at home.

Ingredients

Number of persons: 4
Preparation time: 30 min

  • 2 chicken stock cubes
  • 250 gr thin noodles (ramen)
  • 2 bacon slices
  • 4 eggs
  • pak choi
  • 1 red bell pepper
  • 1 small can of corn
  • ½ tsp 5 spice powder
  • piece of ginger
  • 2 cloves garlic, crushed
  • 1 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp olive oil

Preparation method

  1. Fry the bacon on both sides on high heat until slightly crispy. Place them in a baking dish and brush with the hoisin sauce on both sides. Place in an oven at 200 degrees for 20-30 minutes. Turn them over occasionally and keep a close eye on them to make sure they don't burn.
  2. Boil ± 2 liters of water. Add the soy sauce, garlic, chopped ginger, stock cubes and 5 spices. Let it simmer for about 15 minutes. (I often use the kettle to make the water boil faster).
  3. Beat the eggs with a little soy sauce. Fry it gently in the olive oil to form a large omelette. Meanwhile, cut the bell pepper and pak choi into pieces.
  4. Remove the ginger and garlic from your stock. Add the noodles, pak choi and bell pepper and let them cook for ± 4 minutes (check the packaging of your noodles).
  5. Meanwhile, cut the bacon and omelette into pieces. Spoon all your ingredients into the plates. Sprinkle with corn.

Homemade hoisin sauce in 5 minutes

The hoisin sauce used gives a typical taste to this recipe. Hoisin sauce is a sweet sauce made from soybeans, rice vinegar, garlic, red peppers, sugar, salt and water. Hoisin means 'sea creatures' in Cantonese, strangely enough, no seafood is used in the sauce and it is often used to flavor meat dishes.

You can buy the sauce ready-made, but did you know it is also easy to make yourself? Mix in a bowl: 2 tablespoons peanut butter, 60 ml soy sauce, 1 tablespoon honey, 2 teaspoons rice vinegar, 2 teaspoons sesame oil, 1 clove grated garlic and a pinch of black pepper. Add 1 more teaspoon of miso paste or half a teaspoon of spicy fermented bean paste ( source ) . Also easy right?!
